BBQ Sauce

Bourbon-Bacon Barbecue Sauce

What youll need:

  • 1/2 cup bacon of your choice diced
  • 1/2 cup red onions diced
  • 2 garlic cloves chopped
  • 1 cup of ketchup
  • 1/2 cup cider vinegar
  • 1/2 cup dark brown sugar
  • 1/4 cup Worcestershire sauce
  • 3 tablespoons bourbon
  • 2 tablespoons dark molasses
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon ground mustard
  • Salt and pepper to taste

What youll need to do:
Cook bacon in small saucepan over medium heat, stirring occasionally until crisp (8 minutes)

Set bacon aside in small bowl, leaving the fat in the pan.

Reduce heat to medium-low, add onion and cook until tender stirring occasionally (3 minutes)

Add garlic to pan and cook until fragrant (30-60 seconds)

Add all other ingredients and whisk until mixed

Stir in bacon and bring mixture to a boil

Reduce heat to low and simmer. Stir the mixture occasionally until thickened and holds a line on the back of a wooden spoon when you drag a finger through it (25 minutes)

You can add more salt and pepper if necessary.

Tried and True Texas Brisket

What youll need:

  • 1 whole brisket
  • 2/3-1 cup soy sauce (depending on your taste)
  • Garlic salt to taste
  • Salt and pepper to taste
  • 1 can beef broth

What youll need to do:

Fire up your grill and allow the temperature to stabilize around 250 degrees. Wet the brisket with soy sauce and put some garlic salt and ground pepper on it (about 1 teaspoon each).

When the grill is ready, put the meat on it with the fatty side up so it will moisten while cooking. Close the lid and cook for 4 hours. Dont open the lid.

After 4 hours, you can mop the brisket with beef broth to keep it from drying out. When the internal temperature reaches 175-180 degrees, pull it out and wrap it in heavy-duty aluminum foil, pouring the rest of the beef broth onto the brisket. Put it back on the grill and continue cooking until the internal temperature is 190 degrees (about 1 hour). Remove from foil. Let it rest for a little while, but dont let the temperature drop below 145 degrees.

Thats it! Time to eat.
