Here in Texas, we sure do love our barbecue. We love spending time with our family and friends – poolside – soaking in the sunshine and breathing in the smell of a good brisket cooking over the flames.
The weather hasn’t exactly been ideal for hanging out by the grill lately though. This weekend, however, is supposed to be gorgeous (*crossing our fingers*), and we think it’s time for some good grilling recipes.
In order for you to enjoy the great weather as much as possible (before it gets TOO hot, or we get another wave of freezing temperatures), we found some recipes around the web that will keep you outside all day long. This blog post has breakfast, lunch, dinner, and dessert recipes for you to try out in your outdoor kitchen. Give them a try, and let us know what you think!
BREAKFAST:
Grilled Breakfast Pizza
What You’ll Need:
12 ounces of fresh pizza dough
Olive oil
3 Eggs
3 strips of cooked bacon, cut into bite-sized pieces
1 cup of grated mozzarella cheese
1/4 cup of grated parmesan
1 pinch of Kosher salt
1 pinch of freshly cracked black pepper
1 tablespoon of minced flat-leaf parsley
1 tablespoon of minced chives
1 whole scallion, trimmed & thinly sliced
Your best bet is to go ahead and prep the food while your grill is getting nice and hot. Crack the eggs into a bowl to make sure the shell doesn’t fall onto the pizza. Then, get outside and start grillin’! To see the full recipe for this breakfast pizza, click here.
Grilled Apple Sticky Buns
If you’ve got a sweet tooth in the morning, this is the perfect recipe for you.
What You’ll Need:
1 can (6 ounces) of refrigerated biscuits
1 tablespoon of cinnamon, divided
4 apples
1/4 cup brown sugar, divided
1/4 cup butter, divided
Any other toppings you like – we tried some roasted pecans

LUNCH
Grilled Quesadillas
What You’ll Need:
8 (8-inch) flour tortillas
2 cups shredded Cheddar cheese (about 8 ounces)
1 jar (16 ounces) of your favorite Salsa
1 cup diced cooked chicken
4 medium green onions, chopped (about 1/2 cup)
Vegetable oil
1 container (8 ounces) sour cream

Grilled Veggie and Mozzarella Sandwich:
What you’ll need:
1 red bell pepper, cut into 1-inch-wide strips
2 small summer squash, cut into 1/4-inch-thick strips lengthwise
8 slices whole grain bread
2 cups baby arugula
4 1/4-inch-thick slices fresh mozzarella cheese

DINNER:
Grilled Steaks with Cilantro Sauce
What you’ll need:
2 cups of fresh parsley
2 cups of fresh cilantro
1 cup fresh mint
8 garlic cloves, chopped
1.75 teaspoons kosher salt, divided
1.25 teaspoons of freshly ground black pepper, divided
2 cups of olive oil
2/3 cup of red wine vinegar
2 tablespoons of lemon juice
1/2 of a teaspoon of crushed red pepper
4 pounds of beef flat iron steaks or top sirloin steaks (1 inch thick)

Pesto Grilled Shrimp
What You’ll Need:
1/2 cup basil, packed
1 small clove garlic
1 tablespoon pine nuts, toasted
2 tablespoons parmigiano reggiano (parmesan), grated
2 tablespoons olive oil
1 tablespoon lemon juice (~1/4 lemon)
salt and pepper to taste
1 pound shrimp, peeled and deveined

What You’ll Need:
1 banana, peeled
2 tablespoons miniature marshmallows
2 tablespoons semi-sweet chocolate chips
2 tablespoons Cinnamon Toast Crunch cereal, slightly crushed

Grilled Fruit Cobbler
What You’ll Need:
1 cup plus 1 tablespoon All Purpose Flour
� cup plus 2 tablespoons sugar, plus more for sprinkling
2 teaspoons baking powder
� cup milk, at room temperature
� cup vegetable oil or unsalted butter, melted
1� pounds nectarines or peaches (3 to 4), sliced
1 cup mixed berries or pitted cherries
Vanilla ice cream, for serving (optional)
Serve warm with your favorite Bluebell on top.
